Vegetarian Sausage Roll Recipe

I got the idea for this recipe from a bar that my friends and I would occasionally go to and I would always go with the intention to order their vegetarian sausage rolls, however, one night when we popped in, they had changed the menu. That’s right, no more delicious sausage rolls for me! I was devastated! haha

I have recently been experimenting with some vegetarian recipes and this happened to spring to mind, so I thought I would try and recreate them and I have to say that I am quite pleased with my efforts! I have made these a couple of times now and have taken them to work for morning tea and also to one of my best friends recent baby shower and they seem to be quite popular.

With that being said, I thought I would share the recipe with you! This recipe makes approximately 24 Mini Sausage Rolls or 12 Medium Size Sausage Rolls.

What you will need:

  • 1 Medium sized Butternut Pumpkin
  • 1 Medium sized Sweet Potato
  • 1/2 Cup of finely chopped Kale Leaves
  • 100g Danish Feta
  • 1 Teaspoon of minced Garlic
  • 1 Packet of 6 Puff Pastry Sheets
  • 1 Egg

How to make them:

  1. Pre-Heat the oven to 200°C
  2. Chop and peel the Butternut Pumpkin and Sweet Potato and place in a pot on the stove to boil until soft enough to mash
  3. While the Pumpkin and Sweet Potato are cooking, begin chopping your Kale leaves very finely
  4. Once the Pumpkin and Sweet Potato are soft, drain the water and mash them until there are no longer any lumps
  5. Add 1 teaspoon of minced Garlic, 1/2 cup of chopped Kale leaves and crumble the Feta as you add it to the mixture and then mix everything together
  6. Place a Puff Pastry sheet on a large chopping board and scoop the mixture in a line across the top or bottom of the pastry and then roll the pastry over the mixture and continue rolling until you reach the end of that sheet
  7. Repeat this process until you have used up all of your Puff Pastry sheets or you have reached the desired amount of rolls
  8. Cut the rolls into your desired size, depending on whether you want mini sausage rolls or large sausage rolls
  9. Place an egg in a bowl and whisk until smooth
  10. Use a basting brush to brush the egg on top of each roll
  11. Grab a baking tray and lay a sheet of baking paper on top, spraying this with a light spray of cooking oil
  12. Place the sausage rolls evenly on the baking paper and then place in the oven and leave for approximately 25 minutes or until golden brown
